Oats – 1 cup

Lentils – 1/2 cup

Ginger – a small piece

Agave powder – two pinches

Salt—required amount

Seasoning:

Ghee – 1 tbsp

Pepper – 1/2 tsp

Cumin – 1/2 tsp

Green Chillies – 1

Curry leaves – 1 bunch

Cashew nuts – a little (optional)

Recipe:

  • Lightly roast oats and lentils separately in a pan.
  • Peel the ginger and finely chop it. Cut the green chillies in half.
  • Grind both pepper and cumin together.
  • In a cooker, add roasted oats, lentils, finely chopped ginger, asparagus powder, salt and 3 cups of water, cover and cook till 3 or 4 whistles. Once cool, open the cooker and mash well.
  • Heat very little ghee in a pan. Once the ghee is hot, add cashews, green chillies, curry leaves and pepper, cumin powder and pour it over the Pongal and stir well.

Note: You can use coconut oil or even olive oil instead of ghee for this Pongal seasoning. Green peas can also be added if desired.
