You can never get enough of strawberries.
The red fruits are ideal as a healthy and cooling dessert, especially on hot summer days. Like the strawberry soup with refreshing basil and lime sorbet based on a recipe by star chef Johann Lafer.

These are the ingredients for strawberry soup
For the basil lime sorbet:
4 juicy limes
175 g vanilla sugar de Tahitian
200ml of water
2 bunches of basil
1 egg white
For the strawberry soup:
500 g ripe strawberries
100 grams of sugar
250 ml sparkling wine

This is how the preparation of the strawberry soup works
Halve the limes, squeeze out the juice and bring to the boil with vanilla sugar and water. Then let it cool down. Rinse the basil, shake dry, pluck the leaves and roughly chop. Mix the lemon juice and basil very finely with a hand blender. Stir in the egg white and freeze the mixture in an ice cream maker until creamy. Then let it set in the freezer for a while. Clean, wash and cut the strawberries into small pieces. Put 2/3 of it in a blender with the sugar and sparkling wine and puree finely. Place the remaining pieces of strawberry in dessert glasses, ladle strawberry soup over them and top each with a large scoop of basil-lime sorbet. Sprinkle with basil leaves and serve dusted with a little powdered sugar.
Tip: This recipe is easy to prepare ahead of time. Shortly before serving, pour the sparkling wine over the strawberries. Bon appetit!
