“With Valentine flours, we rediscover the taste of wheat. This compliment from Alice Crosby, who opened “Materials Raw”, a sourdough bakery school in Brussels (Belgium), couldn’t please Valentine Franc happier. For seven years, this luminous fiftieth-year-old has been cultivating varieties of old wheat in Soisy-sur-École (Essonne), in the fields of the Montaquoy farm, about fifty kilometers from Paris. She is not content with being a cereal farmer, since she is also a miller and offers her flour to several bakers, particularly in Paris.
