The current study, published in the journal Journal of Agricultural and Food Chemistry, has now shown that espresso can prevent the formation of these “tau fibrils”.

For this purpose, the scientists examined the chemical composition of an espresso-coffee mixture. These are Arabica coffees from South America and Robusta coffees from Africa and Southwest Asia. They made the coffee mixture from the ground beans and used it to make the espresso. They then examined the chemical composition using nuclear magnetic resonance spectroscopy. Above all, they tested the effect of the four substances contained in the espresso: caffeine, trigonelline, genistein, and theobromine.

In the laboratory, they then observed the reaction of the individual substances and the entire espresso extract with the “dew proteins” for up to 40 hours. The research team came to the following conclusions: Caffeine and genistein showed an effect. “Tau fibrils” became shorter – these do not lead to further clumping and are not toxic. “Tau fibrils” did not form larger fibers. The entire espresso extract had the strongest effect.

The result of the study shows that espresso can work against neurodegenerative diseases, including Parkinson’s. However, it is important to note that the study is research in a laboratory and not on a human being. This requires further research work. But Alzheimer’s disease can also be prevented by other measures.
