Au be de sa gallery-brasserie, The Graphic Brewery, in Carantec (Finistère), Pierre-Yves Jaouen has developed a unique product. A product whose story began by chance, in the most emblematic bistro in Morlaix, Le Ty Coz ​​(“The House” in Breton) and which led to the meeting between the brewer and Émile Auté, Michel Thévot’s partner, who cultivates on the land of its Moulin de Kérouzéré, in the Guillec valley, in Sibiril (Finistère), an internationally renowned tea.

In this exotic botanical reserve which is home to around 200 plants, 3000 ha of camellia sinensis continue to thrive. The Émile Auté house, which now produces this Sibiril tea (come 3rd in 2019 in the Agency’s international competition for the promotion of agricultural products ahead of the Japanese and the Chinese), makes green, black or white tea from these leaves. “It was while discussing with Émile and Cécile du Ty Coz ​​that the question of a collective creation arose. But the problem is that tea comes out very badly in beer; it doesn’t taste good. So, instead of looking for the aromatic, I thought to bring out the bitterness of the tea”.

A blonde with an amazing flavor

Neither one nor two, Émile Auté offers him a so-called “dark” tea, a product fermented in barrels of cognac, embellished with a little smoked tea. Twenty liters of infusion for 1000 liters of beer which gives the blonde “Tea Coz” (5%) its amazing flavor.

“I didn’t expect it, I have a lot of requests, slips Pierre-Yves, who would like to make it one of his permanent beers. Also, the brews, whose cereals are 100% organic and Breton (“30% Breton hops less than 15 km from the brewery!”), have been relaunched.
