A cheese from the city of Valença, in Rio de Janeiro, 160 km from the Fluminense capital, was among the 12 best of the Mondial du Fromage 2023, an international championship that took place in Tours, France, from September 10 to 12 . Produced by the artisanal cheese factory Capril do Lago, Caprinus managed to place itself in seventh place in the competition ranking, being the only non-European cheese to reach the last phase.
“It was a big surprise for me when I saw the results,” says Fabrício Vieira, 47, the entrepreneur behind the product. “We are a small artisanal cheese factory with eight employees, which produces ten kilos of cheese a day.” The company’s involvement in cheese production is recent. Vieira began making milk products in 2020, during the pandemic, using the refrigerator in his own house. However, little by little, he professionalized the production.
