Teochew brine is the soul of Teochew cuisine. The two chefs decided to introduce a new style of brine to Hong Kong people. They abandoned the traditional high-fire cooking and replaced it with cinnamon, star anise, licorice and other spices, first baked and then stir-fried, and then added local soy sauce and various kinds of brine. Meat, tofu and other ingredients are cooked at three different temperatures using high, medium and off heat (three stages of heat) to make the marinade more flavorful.

Since Teochew people live by the sea, you can also find various kinds of fish on the menu. The Teochew people are very particular about the sauces that go with their food, almost every dish is served, and different dishes must be paired with different sauces. Chef Shao specially pairs the restaurant’s delicacies with a variety of classic and homemade dipping sauces. The classic dipping sauce combinations include frozen flower crab with ginger rice vinegar, Teochew fish rice with Puning bean paste, braised meat with garlic vinegar, etc.
