La Ferme ô Pâtes, a model of agricultural diversification, settles in Rungis in Toulouse

“Entering the MIN is for us the opportunity to penetrate the Toulouse market and reach new professional clients,” assures Christine Julien, founder with her husband, Florian Leguay, of La ferme ô pâtés, in Sepx (Haute- Garonne), south of Toulouse. This agricultural operation in Comminges is one of the new companies hosted at the Grand Marché (MIN) in Toulouse, the second largest wholesale market in France, behind Rungis.

With seven other start-ups such as Quercy Réfrigération, Ferm’en Bio or Terra Mair, Ferme ô pâtés will be able to benefit from the MIN ecosystem and network to develop its pasta production activity.

Traditionally molded pasta

While her husband had been established since 2011 as a breeder of dairy cows, chickens and a cereal farmer, his wife, Christine Julien, joined him in 2021 to diversify the farm’s activity by producing flour from cereals and turn them into pasta. The Occitanie region grants them a subsidy for their project.

“Cereals were the least valued workshop on the farm and there is a market, so we decided to launch this project by doing everything, from A to Z,” explains the farmer, who was previously a teacher-researcher. The idea is to transform what we produce: we created a place to store cereals, built a building with two stone mills to make flour and a workshop for making pasta. »

Soft wheat pasta, in different shapes, is molded in the traditional way and dried at low temperature to preserve the taste and nutritional quality of the flour. They are sold directly on the farm and in producer stores and grocery stores around the farm, within a radius of 70 kilometers.

They are now available to professionals on the Carreau des producers of the Grand Marché de Toulouse on Fridays. A location usually reserved for fruits and vegetables which will allow the couple to approach Toulouse customers. La Ferme ô Pâtés, which also manufactures and markets sunflower oil, plans to produce 12 tonnes of pasta per year, 6 to 8 tonnes of flour and 2,000 liters of oil.
