Gluten-free baking can be quite a challenge because it requires combining different ingredients that allow the yeast or sourdough to rise correctly, which is why a simpler alternative version, also perfect for athletes, is protein quick breads like this one we propose.

Imitating the formula of a sponge cake, although more consistent and without adding any sweetener, these breads They are easy to enrich in their protein intake by using ground nuts and different seeds. They also contain a good amount of egg and some natural dairy, such as yogurt or quark cheese, which add nutrients and help give consistency to the crumb.

We can use another combination of ground nuts, although trying to make it have a fine consistency imitating cereal flour. Hazelnut has a characteristic flavor that may not be liked by everyone, but ground almonds are much softer and provide a crumb with a very pleasant and light texture. We can also add aromatic herbs or spices to taste.

Separate the yolks from the egg whites, being careful not to stain with each other. Reserve the whites in the refrigerator. Line a rectangular mold about 20 cm long with parchment paper.

Place the flax, chia, hazelnut, almond and salt in a container. Add the first amount of water, the yolks and the drained yogurt or quark cheese. Mix everything well until you have a wet dough. Cover with a cloth and let rest 30 minutes.

Preheat the oven to 180º C. Add the baking powder to the dough with the rest of the water and mix well. Beat the reserved egg whites until stiff with a pinch of salt using a whisk blender.

Add 1/3 of the whipped egg whites to the dough, mix gently with a spoon and add another third, incorporating with circular movements. Finish adding the rest of the egg whites and mix gently until you have a homogeneous mass.

Fill the mold and cover with nuts or seeds to taste. Bake in the lower half of the oven for, approximately 75-80 minutes. Keep an eye on it after almost an hour to prevent it from burning on top.

Check that it is ready inside by poking with a toothpick. Wait 10 minutes out of the oven before unmolding and let cool completely on a rack.
