French cream dessert in collaboration with famous domestic pastry chef revealed
French cream desserts produced in collaboration with famous domestic pastry chefs have been unveiled in the European cream promotion campaign ‘European Essentials’ hosted by the French National Dairy Council with financial support from the European Union (EU).
This campaign is being carried out under the slogan, ‘Europe Essentials: French Cream, Pure Excellence’. It aims to raise awareness and promote the excellence of French cream among domestic confectionery industry professionals and home bakers.
The ‘Mille-Feuille Daeheung’ by Chef Kang Hyun-ji and Jeong Yong-hyeon of Gwajabang, who filmed this year’s campaign video together, is made by steeping vanilla beans and tonka beans in French cream to bring out the rich flavor of the cream, and adding domestic red beans that create a Korean taste. In addition, in order to show the excellent workability of French cream, a cream rim similar to the texture of pastry was used to clearly reveal the texture of the cream.
This coming September, Chef Jiyeon Kim of Bonne Confectionery will hold a special lecture on French cream for students at Busan Health College and Busan Tourism High School. In October, Chef Selim Jeong, the winner of the 2024 French Cream Patisserie Contest (2024 Rising Pastry Chef Award), will invite reporters and influencers to hold a showcase to showcase her French pastry training experience, a special prize for winning.
