“The most important thing is to know the function of the animal product in the recipe. For example, if an egg is used as a “binding” material in the recipe, you can replace it with flaxseed or canned chickpea liquid, and if the egg is needed to get the fluffiness, you can use plant-based yogurt instead,” asserts Lidl Lietuva‘s sustainability manager.

She adds that cow’s milk, which is often found in the list of ingredients in recipes, can be replaced with coconut, almond, oat or soy beverages, butter with sunflower, coconut, peanut or avocado oil, and meat with beans, lentils, mushrooms, nuts, tofu or a mixture of various vegetables. .

“For example, we can safely call cheese one of our favorite products and it is used in many dishes. However, we can also easily replace it with a plant-based alternative – grind the desired nuts, such as almonds, with nutritional yeast and spices in a food processor. The nuts will give a creamy consistency, and the yeast will give the taste of cheese”, says M. Anilionė.

When the autumn weather comes, you want to cook at home more and more often, so for cozy evenings, Lidl offers you to make potato rolls with spinach and mushrooms.

 

Italian rolls with spinach and mushrooms

You will need:

2 tablespoons of olive oil,

1 pc. onion,

4 pcs. cloves of garlic,

200 g of brown champignons,

2 tablespoons of flour,

125 ml of vegetable broth,

400 ml of coconut milk,

1 tablespoon of lemon juice,

1 teaspoon of dried herbs

Salt, pepper,

500 g of potato rolls,

100 g of spinach.

Preparation:

  1. Heat the olive oil in a pan over medium heat. Add the finely chopped onion and stir-fry for a few minutes until softened. Add the finely chopped cloves of garlic and cook for another minute until they emit a pleasant aroma.
  2. Add the thinly sliced ​​champignons. Cook for a few more minutes, stirring occasionally, until softened.
  3. Add the flour and mix quickly until no dry flour remains.
  4. Add the vegetable stock and stir.
  5. While continuing to mix, slowly pour in the coconut milk. You should get a sauce with an even texture (no lumps). Season with lemon juice, salt and pepper. Add the potato rolls and mix. Bring to a boil and cook for about 5 minutes, until the sauce has thickened and the dumplings are cooked.
  6. At the end of cooking, stir in the chopped spinach leaves. Heat for another minute until they collapse and remove from heat.
  7. Serve immediately, garnished with fresh basil leaves, grated lemon zest and chili flakes.

You can also make potato dumplings at home. If you decide to do so, follow these proportions: boil half a kilogram of potatoes with their skins in salted water until soft. Peel the skins and mash the potatoes with a tablespoon of flour, a tablespoon of potato starch and a teaspoon of salt. Knead the mass, take it in parts and form “sausages” on a table sprinkled with flour, cut them into small pieces of a couple of centimeters long into rolls that you can cook immediately.
