‘Kimchi Day’ is celebrated around the world
Expand exports with local customized products
At the first K-Food Forum held a few days ago, Daesang, the creator of the kimchi brand ‘Jongga’, gave an interesting presentation on the provocative topic ’Can kimchi surpass NVIDIA?’ Currently, the global kimchi market is worth about 5 trillion won, but it will grow to 15 trillion won by 2050. Starting with non-spicy dongchimi, if various related products such as kimchi spread, kimchi powder, and kimchi snacks are made, it will grow into a food company as large as NVIDIA. He claimed that it could be done. As demand for kimchi continues to increase overseas, in 2022, Daesang became the first food company to establish a kimchi factory near Los Angeles, USA, capable of producing 2,000 tons of kimchi per year. As the global kimchi market continues to grow, leading domestic food companies are actively investing in kimchi products, such as CJ CheilJedang introducing Bibigo Kimchi and Sempio introducing Kimchi at Home, a kimchi seasoning kit for export.
November 22nd is Kimchi Day. It is the first time in Korea that a food item has been designated as a legal holiday, and what is even more surprising is that in 2013, Korea’s Kimjang (old tradition of making kimchi in early winter) culture itself was designated as a UNESCO Intangible Cultural Heritage of Humanity. Kimjang is a festival and tradition that strengthens family bonds, promotes cooperation in local communities, and passes down know-how from generation to generation. Of course, these days, the number of people who make kimchi is decreasing, but kimchi is a special cultural heritage that can only be found in Korea, and its value beyond food is recognized by people around the world. Kimchi Day has been established and declared not only in Korea, but also in 12 regions in the United States, including California, Virginia, New York, and Washington in September 2021. Kimchi Day can also be enjoyed on November 22 in Brazil, Argentina, and the United Kingdom. Argentina was even the first country in the world to establish Kimchi Day as a national holiday, showing that the scope of the global kimchi market continues to expand.
Archaeological evidence shows that Koreans have preserved vegetables by salting and fermenting them for thousands of years, and before the introduction of refrigeration, they were an important food source to survive Korea’s harsh winters. Looking at the history of kimchi, our ancestors began making and eating kimchi around the 7th century, and when red pepper was introduced to the Korean Peninsula around the Japanese invasions of Korea in 1592, the current spicy kimchi containing red pepper powder was created in the 17th and 18th centuries. Kimchi, with its sour, cool, and crunchy texture, has a variety
In winter, you can eat oyster seasoning with kimchi seasoning, pork kimchi stew made with pork shoulder, and stir-fried kimchi with pork belly.
In particular, kimchi stew can be enjoyed as a rich banquet by adding various ingredients as long as you have well-ripened kimchi. ’Poongnyeon Restaurant 1979′ in Yeouido, Seoul is a place where you can find special kimchi stew. It offers mustard kimchi pork kimchi stew, mustard kimchi back rib kimchi stew, and mustard kimchi mackerel kimchi stew made with both spicy mustard kimchi and sour and sour aged kimchi. Pungnyeon Restaurant 1979 was the first to include mustard kimchi in kimchi stew, but leaf mustard kimchi is also called ‘Mustard Kimchi’ and is loved by foreign tourists.
Kimchi is a fermented food, so it is clear that it is nutritious and good for the body. However, there may be limits to expansion in the global market based on these alone. In order for foreigners to be able to enjoy it comfortably, the spectrum of experiencing kimchi and the export market will expand by increasing accessibility and convenience by changing various forms to suit their food culture, such as spreads on sandwiches, tube-type sauces, seasoning powders, noodles, and snacks. Based on rich content, if products such as how to make kimchi, recipes using kimchi, and products made by processing kimchi are released, wouldn’t kimchi be as popular as NVIDIA?
