It is a rare poisoning, but it can be very serious. The health authorities have been informed of the occurrence of 10 cases clinically suggestive of food-borne botulism: one person died; 8 people are hospitalized in Bordeaux and Ile-de-France), including 7 people in intensive care or in a continuous monitoring unit.

All cases attended the same establishment in Bordeaux between Monday September 4 and Sunday September 10, 2023, the Tchin Tchin Wine Ba bar, very popular with Anglo-Saxon customers and all cases consumed sardines in jars made by the restaurateur (homemade).

This Tuesday, the Regional Health Agency (ARS) of Nouvelle-Aquitaine indicates in a press release that six of them “presented various neurological or digestive symptoms” and were hospitalized in order to “receive anti-botulinum toxin treatment”. “An eighth case remains under analysis,” adds the ARS.

Benjamin Clouzeau, resuscitation doctor at Bordeaux University Hospital, specifies on his X account that three of the people hospitalized “required ventilatory assistance”.

These cases of botulism, a fatal disease in 5 to 10% of cases, could have been caused by the ingestion of homemade canned sardines by the restaurateur. The latter would have acknowledged to Sud Ouest the existence of a “strong odor” emanating from a batch of sterilized sardines. “When I opened, I had to throw some away,” he confirms, adding: “Others appeared healthy and were served to customers. » The restaurateur said he was “devastated for these customers, if it turns out that they fell ill at my place”.

Muscle paralysis, vomiting…

Botulism is an acute neurological condition caused by food that has not been sterilized well enough. The symptoms, whose intensity varies depending on the person, are identical. The ARS mentions “early digestive signs which may be fleeting (abdominal pain, nausea, vomiting and diarrhea), ocular damage (failure to accommodate, blurred vision), neurological symptoms responsible for a risk of aspiration, dryness of the mouth accompanied by a deficiency in swallowing or even speech, and a more or less severe paralysis of the muscles.

The incubation time also varies, from a few hours to a few days. People who have visited this Bordeaux establishment are therefore called upon to be extremely vigilant and to consult in the event of symptoms.

Samples for germs and botulinum toxins were taken by the Gironde Departmental Directorate for Population Protection (DDPP). The results should be known within the next three days. The establishment, which remains open pending the results of the analyses, had to “restrict from today (this Tuesday) and until further notice its activity to the service of wine and snacks which are not likely to present a botulinum risk,” indicates the ARS.
