This is the conclusion reached by Basque scientists from the University of the Basque Country in Spain. By analyzing various physiological parameters of the plants, the team found that buckwheat has the potential to become an alternative to wheat as a cereal. Buckwheat’s photosynthesis rate increases with increasing temperatures, and the plant also tolerates drought better than wheat.
