Carob sponge cake in thermomix simple and very delicious recipe

The recipe is very simple and can be followed both with and without a thermomix.

Ingredients:

6 eggs
200 g of ground almonds (or buy raw almonds and grind them in a thermomix
170 gr of butter
150 gr. panela or, failing that, cane sugar
250 gr. whole wheat spelled flour
70 gr. carob flour (if you want a more intense flavor, 100gr)
250 ml whole milk
1 dessert spoon of baking soda

Preparation:

1. Separate the whites from the yolks, add the butterfly and add only the Clares and we program 3 minutes, 37º, speed 3 and 1/2. We reserve in a large bowl and then mix everything in the same container. We remove butterfly from the thermomix.

2. If you do not have ground almonds, grind the almonds for 1 minute at progressive speed 5-10 and set aside.

3. Preheat oven to 180º

4. Without having to clean the thermomix glass, we add the butter and program 4 minutes, 50º speed 1 and then we add the yolks and panela and program 1 minute at speed 3 and 1/2

We also add the milk, the ground almonds, the spelled flour, the carob and the baking soda and program 3 minutes, speed 3 and 1/2.

5. Mix the result of the thermomix with the egg whites set aside until stiff in the large bowl until the egg whites are mixed and nothing white remains.

6 In a cake mold we add greaseproof paper to the base and walls or if you have a silicone mold, put a little butter on the base and walls and pour the entire mixture and place it in the oven for 30 minutes. As an option you can add walnuts or walnuts and raisins.

7. Check that the cake is ready by piercing it with a knife and if it comes out dry you have it ready! and enjoy!
