In June 2022, after five years in the Saint-Sernin district, Guillaume Momboisse closed his restaurant Sept. Since March 2023, he is back on stage, a stone’s throw from the Carmes market. Open kitchen, contemporary lines and warm tones help to relax the codified atmosphere of the gourmet table. The chef’s cuisine, performed in a creative and playful round of around ten courses at lunch and around twenty at dinner, demonstrates solid technique. Tasting format requires, the pleasure sometimes proves fleeting. But a harmonious thread is unwound throughout the meal, from appetizers to desserts, between small, naughty pleasures to glut on with your fingertips (toasted brioche garnished with wagyu ham and marinated beef tartare) and chic marine flights (diaphanous tail langoustine flavored with curry; John Dory fillet and Paimpol coconuts smoked with beech wood…) The historic Sept had won the star. His little brother should imitate him.

Only a few months of existence for this establishment run by a couple of twenty-somethings – he in the kitchen, she in the dining room – passing through beautiful addresses in the south-east, from Èze to Saint-Tropez. Behind the innocuous facade hides a truly good neo-bistro with straightforward dishes, focused on produce: delicious vitello tonnato with fried capers; fillet of pearly cod, variation of ball and stalk celery… Adopted!

Casa Bomba: the Mediterranean at the party

Tap everything. This is the program of this table, opened last spring by the duo Fabrice Mignot-Guillaume Corona. The two men, already at the initiative of tasteful summer taverns at Biquet Plage and Cap d’Agde, know how to do it when it comes to festive tables. If the pace is sustained, the dishes, with Mediterranean-Levantine influences (lean gravlax in crispy tartlet, roasted eggplant cream; grilled chorizo, green Padrón peppers; beef kebbeh, coriander yogurt, etc.) do not suffer from any false note.

Clément Lessoud offers a three-course lunch menu with incredible value for money. The elegance of his creations, graphic, colorful, luminous, is obvious. Just like his mastery of the plant register. Creamy and generous, its risotto with candied lemon and mandolined vegetables is a model of its kind. This doesn’t mean that you shouldn’t also sit down there in the evening…

L’Arpète: everyone at the market!

The bustling Carmes market has been vibrating a notch higher since the transformation, at the end of 2022, of the former Loge 24, renamed L’Arpète. The atmosphere, always cordial, is now complemented by a beautiful slate fashioned by Rodolphe Lafarge, a self-taught chef who is as skilled in rascally dishes (kidneys with mustard sauce, macaroni gratin; ravigote veal head) as in traveling tapas ( ajo blanco, mussels, grapes; onion fritters, honey, feta…). Since this summer, the place has expanded to the market side with a temperament counter.
