Crush the cookies in a food processor. Add the melted butter and beat it together with the biscuits to mix well. Put a piece of greaseproof paper on the bottom of a mold and pour the mixture. Spread the biscuit very well with a spoon and press it with the bottom of 1 glass. In a bowl, pour ice cubes and cold water, adding the gelatin leaves to soak them. Pour the mascarpone cheese into a glass bowl and after mixing it for a while add the sugar. Stir the mixture very well. Pour 50 g of boiling water into a small bowl and after draining the gelatin leaves from the cold water, dissolve them in the boiling water. Add the gelatin to the mascarpone cheese and after mixing it very well, set it aside. Pour the cold vegetable cream into a bowl and add the sugar and vanillin. With an egg beater, mix until peaks begin to form. We incorporate one mixture into the other, putting a small amount at a time. Mix very well to incorporate all the ingredients together. Take 10 g of juice from a lemon and add it to the mixture, mixing very well. Stick strips of greaseproof paper on the sides of the mold with a little sunflower oil and add the mixture. We spread it by pressing it well so that there are no gaps and we cover it with a film. Put it in the fridge for 2 hours. Unmould the dessert by removing the greaseproof paper from the sides. Put 3-4 kg of strawberry jam in a bowl and mix with a spoon. Carefully pour the jam on the top and spread it evenly. Garnish with fresh strawberries.
