Alexander Huertashead of restaurant 3500, participated in the Bangkok International Food Festival 2023. The Ecuadorian chef was the only Latin American representative of this important gastronomic event, which took place between May 26 and 30, 2023.
He festival which is organized to promote the Thai city as culinary destination It had the participation of approximately 100 local chefs as well as guest chefs from eight different countries. The objective is to exchange and share culinary stories through live gastronomic creations and tastings of their menus.
Among the international chefs who joined the event there are those who run restaurants with Michelin stars, such as Jacob Jan Boerma, Rubén Arnanz, Saito Takayoshi, David Gil Rovira, Riley Sanders and Rick Dingen. Like Huertas, they represented their countries by offering tastings of his best dishes.
He ecuadorian chef prepared, for this special occasion, a varied offer of dishes that combines tradition and avant-garde techniques. Among the dishes that those attending the festival were able to savor were: manaba corviche with chili and peanut sauce, duck tonga, viche with white fish and pumpkin locro with avocado bonbon.
This is the second time in less than a year that Huertas represents the country in a gastronomic event renowned. In November 2022, he was one of the finalists for the VI World Tapas Championship which took place in Valladolid, Spain. The Ecuadorian was selected among more than 100 international chefs.
In this contest, the chef participated with a tapa called Mestizo. The dish incorporated a product from each of the regions of Ecuador. Thus, it contained tuna and watermelon from the Pacific Coast; cocoa nibs and honey from the Amazon, quinoa from the Andean region (Sierra) and coffee from the Galapagos. To assemble the lid, he used a tight shell.
