How to make the perfect healthy homemade mayonnaise
It is a simple and quick recipe for which we only need three ingredients and five minutes, you will see how you will not complicate your life with it: extra virgin olive oil, egg yolk and a little vinegar or lemon juice, plus a pinch of salt, of course.
Ingredients
- 200 ml EVOO
- 1 egg size M
- a pinch of salt
- a splash of lemon or vinegar (to taste)
Elaboration
To make the mayonnaise you just have to put all the ingredients in the glass of your mixer (a hand mixer style hand mixer unless you have a Thermomix type kitchen robot), and proceed to mix them. The trick to making it perfect is not to move the mixer from the bottom of the container until it starts to emulsify.
By doing so we get the lower part of the oil to separate into droplets and mixes effectively with the yolk. Once the mixture begins to thicken, we can move the mixer up and down, and add the rest of the oil. If you see that it lacks salt or lemon, adjust it until it is just the way you like it. And ready!
