Defeat the climate crisis through the stomach: Sustainability Week 2022 kicks off

In a cynical timing that only reality can produce, the week of sustainability is launched in parallel with the collapse of the glacier in Italy. The tragic-dramatic garnet of reality only highlights the climate crisis that is taking place in these very moments, and although it is only a drop in the ocean – the culinary week that will take place in restaurants in the city brings to mind the issue of sustainability as a significant step towards preserving the planet.

Sustainability Week 2022 kicks off under the title “Tasting from the Future”, and for the first time it combines the worlds of food tech and local elite cuisine. For an entire week (10-16.7), special menus will be served in the participating restaurants, including culinary solutions to deal with the climate crisis and its consequences, with each restaurant taking on the challenge of finding a sustainable solution.

For example, at Aria Restaurant, chefs Moshiko Avraham and Guy Gamzo have created a menu that focuses on self-production and emphasizes the world of fish – “prosciutto” tuna with melon cubes, Louisa and Avna, sourdough cracker and seeds with whipped cream and tuna pastrami – these are just a few dishes that reflect fish preservation Fresh, and for use in components that are usually discarded, in order to reduce food waste.

At the Doctor Brothers’ Ivy Restaurant, chef Avishag Levy uses unripe apricots that have been prevented from ripening properly by the weather, making a salad from rigella stalks, rather than the leaves themselves. Other participants in the project: Chef Anar Ben Rafael (Alter), Tomer Tal (George and John), Gil Dahan (Weiss), Moti Titman (Malgo and Malbar), Oren Asido (Ola) and Asaf Gabay (Sheine).

The food will be accompanied by wines from the Or series of the Galilee Mountains Winery, the first sustainable winery in Israel to sign a food waste reduction agreement, and soda-based cocktails, created in collaboration with the Sodastream company. Sustainability Week will be signed by a conference on sustainability and sustainability in the future, hosted by Efrat Anzel (Wednesday, 20.7).
