In the supermarket and in fishmongers we can find desalted or thawed cod in clean pieces that can be cooked or eaten as is, always paying attention to what is indicated on the package. In this way, it becomes a very nutritious food, rich in protein, low in fat and with more flavor than other fish to enrich salads or vegetable dishes that can work, for practical purposes as such.

In this case we use cooked broccoli al denteslightly crunchy, to eat at room temperature or cold, combined with another seasonal vegetable, the green asparagus, which can also be steamed, microwaved or sautéed in a few minutes in the pan. A simple recipe perfect for these days.


Check that the fish is clean of skin and bones, cut into pieces in one bite if it is not already, and mix with the juice of half a lemon, a drizzle of olive oil, granulated garlic to taste and black pepper. Wash and dry well a good bunch of parsley, coriander, dill and/or thyme (or mixture) and chop. mix with the fish and leave to rest.

Cut the broccoli separating the florets and the most tender stems, saving the stems for another recipe. Cut the hardest and most woody base of the asparagus, and cut them in half if they are very large. Wash well and do the same with the radishes.

Cook both vegetables steamed, in the microwave or similar, until they are tender but with a crunchy point. The asparagus can be grilled with a little oil, and the broccoli baked, if we turn it on for another recipe.

Combine the vegetables in a large bowl and add the sliced ​​or quartered radishes. Add more fresh herbs and the marinated fish. Mix and finish dressing to taste with more lemon or olive oil.
