► Coronation Quiche

For 6 persons

200g shortcrust pastry

140g whole heavy cream

2 whole eggs + 1 white

6 sprigs of tarragon

2 handfuls of spinach

1 filet d’huile d‘olive

100 g farmhouse cheddar

80 g shelled cooked broad beans

Fine salt and ground pepper

Wash the spinach and remove the midrib. In a frying pan, with the olive oil, sear the spinach leaves over high heat then drain them. Grate the cheddar and thin the sprigs of tarragon.

Spread the shortcrust pastry in a parchment-lined pie pan. Prick the bottom of the pastry with a fork and brush it with the lightly beaten egg white. Preheat the oven to 180°C. In a salad bowl, mix the eggs with the cheddar, the tarragon leaves, the coarsely chopped spinach and the cooked broad beans. Add the fresh cream, salt, pepper and mix vigorously.

Garnish the bottom of the dough with the cheddar vegetable preparation. Bake for 35 minutes at 180°C. Enjoy warm with a salad while toasting the reign of Charles III.
