Enjoy our mousseline cake recipe and its fresh apricot coulis

Before apricots disappear from the stalls, you have to enjoy them, prepare from jam jars (nothing simpler) or, if you want to spoil your loved ones, concoct this delicious mousseline cake – light as a feather – that a coulis of fresh apricots enhances with its sweet flavors.

The ingredients for 4 people

60 g cornstarch60 g brown sugar1 packet of vanilla sugar2 pinches of salt5 egg whites40 g icing sugar1 tbsp. at s. slivered almonds8 apricots80 g thyme honey1 sprig of rosemary

The steps of the recipe

1. In two stages

Mix the starch with the brown sugar, vanilla sugar and 1 pinch of salt.

Whisk the egg whites with a pinch of salt in a mixer and add the icing sugar when they are firm while continuing to whisk for a few seconds.

2. And three movements

Preheat the oven to 180°C.

Gently mix the 2 preparations and pour into a well-buttered kouglof mould. Level the surface and sprinkle with slivered almonds.

Bake for 30 minutes.

3. Coulis

Cut the apricots into pieces and cook them in a saucepan with the honey, rosemary and 10 cl of water for 8 to 10 minutes.

Remove the rosemary and mix to obtain a nice coulis.

4. Bingo !

Unmold the cake and serve in generous portions with a little apricot coulis.
