Fourth Festival of Chiles en Nogada kicks off in the Historic Center

With the participation of 80 restaurants, the fourth edition of the Festival of Chiles en Nogada began. Historic Centerwhich seeks to offer different versions of the traditional Mexican dish to citizens and visitors.

“We are reaching its fourth edition. When it started, it was precisely to commemorate the 200th anniversary of the formal emergence of chile en nogada and I think it is something that is becoming more and more consolidated every day and what better than in the framework of the eve of the celebration of the national holidays,” said the general coordinator of the Historic Center Authority, José Manuel Oropeza, when inaugurating the gastronomic festival.

Oropeza recalled that the festival emerged as an initiative to boost the economy of the Historic Center during the pandemic, which has been consolidated year after year and has been growing, going from 30 restaurants in its first edition to 80 on this fourth occasion.

Ricardo Ruiz, the capital’s government secretary, said that chile en nogada not only has enormous culinary qualities, but also represents a symbol for Mexicans due to what it historically means due to its colors and the ritual involved in its preparation.

He also noted that the festival gives people the opportunity to try different textures, shapes and flavours, as well as unique plating at each establishment.

Daniela Mijares, president of the National Chamber of the Restaurant and Seasoned Food Industry (Canirac), added that for her sector it is essential to share the culinary wealth of Mexico.

“It is essential to value and promote gastronomy as an integral part of Mexican cuisine. No other cuisine in the world has the cultural and historical background that Mexican cuisine has, and none has all the symbolic meaning behind each of its ingredients and its preparation methods,” said Daniela Mijares.

The 80 participating establishments have a sign on the outside of the premises so that citizens and visitors can locate them; in addition, they can check their location on a map found on the ACH website.

At the end of the festival, the two best chiles en nogada will be awarded in the traditional and innovative categories, and their establishments will receive a monumental alebrije that they can display to remind them that, in addition to the economic boost, it is important to maintain local traditions and culture.
