The final stage of the 20 Hours series “On the road to vacation”, Friday August 19, is the Cévennes. Today’s mission: to wake up a steam train, which has already been in service for 85 years. Three hours later, the train finally set off. It covers 13 km between Saint-Jean-du-Gard (Gard) and Anduze (Gard), and up to 800 passengers are amazed. For a snack, the regional specialty is goat cheese, Pélardon. Here, the goats are raised in the open air, by a former ornithologist. “We love them like our dogs”, says Sébastien Duboz, Pélardon producer at “Les caprices des Cévennes”. The cheese is sublimated with a renowned chef, who advises dipping it in eggs, and dipping it in almond powder before cooking it. On arrival, it’s a little pride.
