For the second consecutive year, the System for the Comprehensive Development of the Family (DIF) Oaxaca will bring together the essence of the Guelaguetza in it gastronomic market “From my roots with their flavors”, which will take place from July 17-31 in the Dance Squarefrom 11:00 a.m. to 10:00 p.m.
For 15 days, 42 traditional cooks who live in the communities of the state, will show the dishes they make with the ingredients produced in their communities, demonstrating the wealth of the entity.
In this edition, each stand will be distinguished by decorative elements from each region, according to their patron saints’ festivals, customs and traditions.
The dining area will be available to diners for tasting Cuban cochinita, segueza, stone broth, papaxtle, popo and yuca that is prepared in the region. Papaloapan Basin; The Mixteca will share his Tlaxiaqueño mole, green pozole, hip mole, cemitas, tetelas, chicken almond stew, chilate and barbecue in the style of Villa Tejúpam de la Unión.
The Southern Sierra will have wild mushroom mole, xhobeta, yellow rabbit, wedding empanadas and meat pie; Isthmus of Tehuantepec will be represented in the garnachas, garnachero chicken, isthmus puree, beef stew, baked fish, isthmus cochito and vupo.
