DECRYPTION – It would be wrong to neglect the nutritional benefits of a pinch of cumin or a chopped parsley.

A lovely summer salad garnished with a few yellow and gold daisies! It is little known, but this modest flower of the fields and gardens with its subtly spicy taste is edible. And favorable for a good nutritional balance: daisy flowers and leaves are rich in potassium, calcium, phosphorus, magnesium, iron, vitamin A and proteins.

This is also the case for many herbs and wild plants that can be collected along the paths, provided, of course, that they are correctly identified and that polluted areas are avoided. Nettle, rich in vitamins, minerals and antioxidants, has long been consumed in soups, omelettes or gratins (only the tops of the plant should be picked with gloves); as well as dandelion (in salad or herbal tea); comfrey (rich in vitamin B12, calcium and potassium, to cook like spinach), or the pretty mallow whose flowers and young fruits are eaten (called “cheese”).
