“The cathedral of Camembert”, they like to say in Orne. The Domfront factory was, until recently, the only one in the world entirely dedicated to the manufacture of the President. It produces more than 500,000 camemberts per day and exports one in five. Lost in the middle of Normandy, this cheese factory is one of the greatest sources of pride for Emmanuel Besnier, the boss of the Lactalis group. She is celebrating her sixtieth birthday.
Created in 1968 by his father Michel Besnier, President Camembert marks a turning point in the history of this cheese. He is at the origin of industrialization, which has not only won him admirers. Unconditional fans of raw milk Camembert deny it its credentials and see pasteurization as the death of the product.
