The marking is indicative not only of the quality, but also of the origin of the meat.

“When it is blue, it shows that the meat was produced in a Bulgarian enterprise. When it is red in color, the origin is another country. If carcass meat is offered in the site, there must be 3 seals – on the shoulder, chest and thigh,” explained Dr. Diana Ivanova, chief inspector at the ODBH – Varna.

If the meat has been frozen and thawed respectively at the establishment, there must be information that it is offered as thawed meat. But how do we know the quality lamb in the window?

“The color should be pink, pale pink or red. The fat of young animals is pale – from white to slightly creamy, while in older animals it is yellowish,” explained Dr. Diana Ivanova to Nova TV.
