Inflation, yellow vests, Covid… despite the crises, the new boom in bakeries in Île-de-France

For several years, bakers have been going through difficult times. However, the trend is good. Last year, 110 new boutiques opened in Paris against a background of renewal of the profession and constant improvement in quality.
