Celiac disease is the total and permanent intolerance to the proteins contained in the gluten of wheat, oats, barley and rye cereals (TACC). In order to raise awareness among the population about this pathology and promote the search for solutions for those affected, the International Day of Celiac Disease is celebrated every May 5th. In the world it is considered the most frequent chronic intestinal disease. It is estimated that in Argentina one in every hundred inhabitants is celiac. It occurs, above all, in people who have a genetic predisposition to suffer from it. It affects both children and adults.
