It all started because I have a brother with whom we blog about chocolates. We went to the country’s cake and to all kinds of domestic competitions, and we talked about how interesting it is that parlor sweets don’t have any competitions. Although the repertoire is quite large, the average person only comes across a small part of it, since everyone buys from supermarkets, where five or six brands are present. We thought that here would be an opportunity for small producers to show what they know.

Not just industrial

In the last eight to ten years, chocolate has been in the limelight, and as a result confectioners have also started producing parlor sugar. It was not only produced by industry, but confectioneries also started it on a small scale. In the last five years, this has developed so much that the quantity is increasing every year: several hundreds of kilos, even tons, are now being produced by confectioneries. These represent a slightly different quality than the average, they try to bring in professionalism and one or two special flavors. I see people like that.

One kilo per family

If my memory serves me correctly, an average Hungarian family consumes a kilo of bacon sugar, but the numbers stagnate. If we look at it from the point of view of sales, it is obviously increasing, since everything is becoming more expensive, but the level of consumption does not change significantly.

Jelly, but not like that

The experience is that jelly is the most popular flavor of bacon, which is why I am surprised that in the last four years, jelly bacon did not even make it to the top 20 in the competition. This year’s winner is a fig-walnut bacon candy topped with fig jelly, but it’s not the jelly we’re thinking of.
