Technology for the production of cultured honey (laboratory production without the use of bees) reports that it was ahead of schedule in the pilot for the construction of a production facility. The facility was established in the company’s laboratories and began production, and output above the company’s previous estimates.
According to Bio Honey, the production process has been streamlined and improved so that the facility now has a potential production capacity of up to 400 kg per day, which is 3 tons per week, and an annual potential of up to 150 tons of cultured honey. According to CBS data, the annual local consumption in Israel is estimated at about 5,000 tons of honey per year, so that the production capacity that Bio Honey developed at the facility constitutes about 3% of the honey consumption in Israel, the company claims.
However it must be said that at the end of the question is how much consumers will want to adopt the cultured product as a substitute for animal honey, both in principle and financially – and in Bio Honey we are not talking about the price tag. Apart from selling honey as a product to end customers, the business model of Bio Honey is also based on selling components from it that it produced in the laboratory to third parties who will produce follow-on products from them.
“In the company’s opinion, the established production system enables the company to accumulate extensive operational knowledge about the commercial production of cultured honey while examining, improving and streamlining the process. This knowledge will lay the foundations for the establishment of larger plants in the company’s target territories,” said Bio Honey.
