Ein soufflé with British cheddar cheese is said to be the reason why French chef Marc Veyrat lost his third Michelin star for a restaurant in the Alps: he now puts the fate of the restaurant, downgraded in 2019, in the hands of his daughter Elise.

“I hope Elise will be passionate about the restaurant I’m giving her and be as happy with the guests as I was,” the 72-year-old told Le Dauphiné Libéré newspaper on Wednesday. Veyrat’s restaurant “Maison des Bois” in Manigod in the French Alps has been closed for three years. The renowned gastronomy guide had removed its third star at the beginning of 2019.

Cheddar statt Reblochon?

The top chef, who often wears a wide-brimmed black hat, went to court over the demotion but was turned away. According to Veyrat, test eaters falsely accused him of using inferior cheddar cheese instead of the regional Reblochon for a cheese soufflé. Michelin does not publicly justify the award and withdrawal of its stars.

“Don’t give me stars anymore. Never again,” said Veyrat to the regional newspaper. The Michelin guide has outlived itself; he only says what many think. He wanted to help his 25-year-old daughter with the reopening, but he wanted to “remain in the background,” Veyrat continued. It is his greatest dream that she will be successful in this profession.

The Michelin stars are considered one of the most important restaurant awards worldwide. They make a decisive contribution to the reputation of chefs – but are also a great burden due to the high demands and constant pressure.

Veyrat had offered regional cuisine with wild herbs, flowers and plants in the “Maison des Bois”. He wants to open another restaurant called Shuss by Marc Veyrat in December in the ski resort of Megève.
