In his gleaming kitchen open to the room, chef Morimoto seems imperturbable. The ballet of scullions moves around him, the waiters noisily take their positions, but he wields his knives and cuts gigantic fillets of fish as if he were alone in the world. For his first restaurant in Europe, this superstar of the kitchens across the Atlantic has chosen Bordeaux, the capital of wines, a nod to his first address opened twenty years ago in the Napa Valley in California.

“It is a pleasure and an honor to welcome you here,” announces Masaharu Morimoto with respect, a few days before the opening of his twenty-second restaurant of the same name.
