Seoul and Busan are set to host an exclusive culinary experience this January, as two-Michelin-starred French chef Stephane Carrade brings his sustainable gastronomy to South Korea. The events, hosted by Chosun Hotel & Resort, promise a unique blend of French technique and local Korean ingredients.

A Taste of ‘Progressive Terroir’

Chef Carrade, celebrated for his commitment to sustainability, will present dinners in both Seoul and Busan, showcasing his philosophy of ‘Progressive Terroir.’

Chef Stephane Carrard helms ‘Le Skiff Club,’ which currently holds both two Michelin stars and the coveted Michelin Green Star, recognizing restaurants dedicated to sustainability and environmental protection. Located within the five-star Hotel Ha(a)ïtza in Arcachon, France, near Bordeaux, ‘Le Skiff Club’ is renowned for its sophisticated French cuisine that champions ingredients and producers from the Aquitaine region.

The ‘Progressive Terroir’ theme blends the established heritage of Chosun Hotel & Resort with Chef Carrade’s culinary approach, which emphasizes the fundamental role of land, nature, and the unique environment in creating exceptional gastronomy. Diners can anticipate a fusion of French finesse with the distinct characteristics of Seoul and Busan, bridging traditional and modern culinary elements.

Seoul’s Eight-Course Extravaganza

The culinary journey begins at the Westin Chosun Seoul’s American Wine & Dine ‘Ninth Gate’ on Wednesday, January 21, with an eight-course dinner meticulously prepared by Chef Carrade, accompanied by eight carefully selected alcoholic beverage pairings.

The menu thoughtfully integrates natural Korean ingredients with delicate French techniques, focusing on the chef’s pursuit of “the taste close to nature” and reflecting both regionality and seasonality. Complementing the meal, Château Poupille, a wine producer from the Bordeaux region of France, has been chosen for its pairings. Rare vintages, including 1990, 1995, 2000, and 2010, alongside Château Haut Cardinal Saint-Emilion Grand Cru 2012, will be presented in magnum bottles for a truly opulent tasting experience.

Busan’s Coastal Culinary Collaboration

On Friday, January 23, the Westin Chosun Busan’s Korean restaurant ‘Shobul’ will host a four-hands high-end dinner, set against the backdrop of Haeundae’s stunning night view. Chef Stephane Carrard will collaborate with the head chef of ‘Shobul’ to present an eight-course dinner, distinct from the Seoul offering, paired with eight alcoholic beverages.

This event offers a unique opportunity to enjoy French dining within a Korean restaurant setting, overlooking the Haeundae sea. Premium natural mineral water brand ‘Evian’ is the main sponsor, reinforcing the commitment to high-end gourmet food rooted in nature.
