You can make a simple and refreshing ginseng drink (ade) by cutting raw ginseng into small pieces, mixing it with honey, and adding it to carbonated water.

The 2025 College Scholastic Ability Test is just four months away. The Rural Development Administration introduced a simple recipe using ginseng to help students prepare for the test and improve their concentration.

Ginseng contains many useful substances that are good for the body, such as saponin components called ginsenosides, non-saponin proteins, and polysaccharides, which help boost immunity, relieve fatigue, and improve memory.

It is an excellent nutritious ingredient that is always included on a healthy meal table, especially as it goes well with various other ingredients and helps take care of the health of test takers and induces psychological stability.

It is a good idea to purchase red ginseng and processed ginseng products sold on the market, but if you purchase unprocessed ginseng (fresh ginseng) from a wholesale market or online market, you can enjoy ginseng at a relatively low price (3,400 won per root)*.

△Dried and made in various ways= Dried ginseng chips are made by cutting ginseng into 2~3mm thick pieces and drying it in a food dehydrator. Ginseng chips made this way can be eaten as is, or enjoyed as a snack to satisfy hunger with cereal, nuts, milk, or yogurt.

△Grilled and filling = Cut ginseng into 2cm lengths and lightly simmer in soy sauce. Skewer it with pre-prepared chicken breast, broccoli, paprika, etc., add soy sauce, and grill gently over low heat. Grilled ginseng chicken skewers whet your appetite and can supplement the calories and protein you lack.

Meanwhile, when purchasing fresh ginseng, choose one with a white body color, no red or black spots, and with fine roots that are attached in a round shape. When washing ginseng, soak it in water for about 5 minutes and then use a toothbrush to clean off the dirt. If you buy washed ginseng, which is recently sold in online markets, you can save yourself the hassle of cleaning off the dirt.

According to Ma Gyeong-ho, head of the Ginseng Division at the National Institute of Horticultural & Herbal Science, Rural Development Administration, “During the summer when the heat and rainy season begin, food using ginseng will help students manage their physical strength.” He added, “We will explore various ways to enable ginseng to be used in various ways, not only as a herbal medicine but also as a food ingredient.”
