“Liu Tiao” is jointly worked by “Second Brother Guan” and his friend Natalie. “Second Brother Guan” is the main force on the front line, while Natalie is at the helm of everything in the kitchen. The store space is not big, and it can only do takeaway business. If you pass by the small shop, you will first be attracted by “Second Brother Guan” and the non-stop playing cock crowing music. “Second Brother Guan” would wear green Guan Yu clothes every day, put on sunglasses and sell behind the counter. “Er Ge Guan” is an overseas Chinese in Indonesia. His family runs a seafood restaurant. Every two to three months, he goes to Indonesia to buy spices for marinating the signature food of “Liu Tiao” – raw fried chicken legs (Liu Tiao). After the fried chicken is marinated to taste, it will be deep-fried once in hot oil. After the customer places an order, it will be fried in high-temperature boiling oil for several times. Natalie said that this can make the chicken skin more crispy and delicious. Customers can choose to order Liu Tiao a la carte, or serve it with rice, salad dishes and meals cooked in chicken soup. The price is quite affordable in Wanchai District, and it is really a gift for wage earners.

Natalie cooks the salted pork knuckle for two hours every day, then burns the skin and removes the hair with a gun, and then boils for 40 minutes for later use. Before serving, the salted pork knuckle will be deep-fried for 8 minutes, the taste is crispy on the outside and soft on the inside.

Each salted pork knuckle needs to go through multiple preparations, and it is boiled for nearly 3 hours to make the meat tender, and finally it is fried in boiling oil until it is crispy.
