Prime Minister Kishida placed great emphasis on using ingredients from Hiroshima to create the menu for the G7 summit. The ingredients will therefore include wagyu beef or sea urchin. The menu will have several courses and the chefs have spent many months preparing it. One of its highlights will be the traditional Hiroshima dish okonomiyaki, which took off after the Americans dropped an atomic bomb on the city in 1945, and statesmen can also look forward to oysters.

Local farmers and fishermen and other growers have spent months trying to get their products on the table at the G7 summit, there were plenty of chances, after all, there will be four full, multi-course meals in two 2 days of the summit. And Prime Minister Kishida himself intervened in the creation of the menu so that everything was to his taste. On Saturday, Biden will become only the second US president, after Barack Obama, to visit the Hiroshima Peace Museum, followed by a working lunch of marinated salmon, Japanese redfish and chicken ballotine. There will also be dessert – lemon semifreddo with lemon ice cream and also the sludge left over from sake production. It is considered a delicacy in Japan with a sweet to umami fruit taste.

The working evening will take place in a traditional ryokan inn on the nearby island of Itsukushima, where the menu will open seafood selection typical of the Inner Sea, the following course will represent rosehip fish broth and the main course will be Hiroshima beef and eel sushi. A selection of Hiroshima desserts closes the evening menu.

There are, of course, items on the menu that some politicians with less “worldly” tastes might turn off, including grilled colocasia edible also known as taro or sea urchin, or a dish of natto made from fermented soybeans known for their smell and sticky texture. The rest of the menu should be more “normal”, especially considering how recently Japanese cuisine has become more and more popular in the world.

Prime Minister Kishida, who himself belongs to the Hiroshima constituency, spent half a year working closely with the creators of the summit menu. Among other things, local sake will be available for tasting. He revealed that he is a lover of street food.
