Your shopping list:

250 g Rhabarber

250 g ripe strawberries

50 grams of sugar

200 ml white wine

50 ml Grenadine

juice of 1 lemon

1 tsp cornstarch mixed with a little cold water

100 g low-fat quark

2 bags of vanilla sugar

2 egg yolks

Juice and grated zest of 1 lime

100 g ground almonds

2 sheets of strudel pastry, approx. 40×30 cm (frozen goods)

approx. 50 g melted butter for brushing

approx. 500 ml vegetable oil for frying

Powdered sugar for dusting

preparation

Peel the rhubarb and cut into pieces. Wash and trim the strawberries and cut in halves or quarters depending on their size. Boil the wine with sugar, grenadine and lemon juice in a saucepan, add the rhubarb pieces and sauté for 2-3 minutes with the lid on until soft. Then take the rhubarb out of the broth, let it reduce by half and bind slightly with a little cornstarch. Mix the rhubarb and strawberry pieces into the syrup and leave to cool. Mix the quark with the vanilla sugar, egg yolk, lemon zest and lime juice, mix in the ground almonds. Brush one sheet of strudel pastry with melted butter and cover with a second sheet. Brush the pastry sheet with the remaining butter, divide into 4 equal squares. Spread the almond and quark mixture in a heap on the squares of dough, fold the corners up and press together into little bags. Gently tie each bag with a piece of kitchen twine, fry in hot oil until golden brown and crispy and drain on paper towels. Carefully remove the kitchen twine with scissors. Place the baked strudel bags on the rhubarb and strawberry ragout and dust with powdered sugar.
