For those who are tired of sautéed or grilled courgettes, here’s a delicious idea to offer a vegetable as a second course (or side dish or appetizer). To be served hot or at room temperature (in summer), the stuffed courgette boats can also be filled with a mixture of mashed potatoes and tuna (or mackerel), perhaps adding a few chopped capers.

The recipe: Stuffed zucchini boats

Ingredients for 4 people:
400 g of potatoes
4 zucchini
5 slices of cooked ham
50 g of grated Parmesan
Sale q.b.
Pepe q.b.

Procedure:
Rinse the potatoes and boil them in a pot with boiling water. Then let them cool and peel them. Puree the potatoes and set aside in a bowl.
Rinse the courgettes and boil them for about 4 minutes in a saucepan with hot water. They must not be boiled, but only softened. Cut them in half lengthwise. Remove the courgette pulp with the help of a teaspoon and place it in the bowl with the boiled potatoes.

Add the grated Parmesan and the cooked ham cut into small pieces to the mixture. Season with salt and pepper and mix.
Place the potato mixture in a sac à poche and insert the mixture into the courgette boats previously dug out and placed on a baking sheet.
Season the courgettes with a drizzle of extra virgin olive oil and bake for about 30 minutes at 200 degrees.
