The proposal is from NotCo, the Chilean company that uses artificial intelligence (AI) to make substitutes for meat, dairy products and dressings based on vegetable ingredients. It achieves this after analyzing the molecular structure of food of animal origin, and thus reproducing flavor, texture and aromas.

The declared objective is to counteract the damaging effects of intensive livestock farming, which occupies a third of the earth’s surface and emits more carbon dioxide than all the world’s transportation.

To imagine another future, the company launched a campaign showing hyper realistic images -also created with AI- from pigs with gray hair and wrinkles, cows with wise eyes and chickens with crow’s feet. She did it through social networks and public road advertisements on both sides of the mountain range, as well as Brazil, Mexico, the United States and Canada.

Although NotCo defines himself as the fastest growing food technology company in Latin America, with economic contributions from businessmen like Marcos Galperin, the enthusiasm does not seem to be replicated in the rest of the world. Beyond Meat and Impossible Foods, two of the largest “vegetable meat” conglomerates, show stagnation that worries their investors, some as notorious as Leonardo DiCaprio, Bill Gates and even former McDonald’s CEO Don Thompson.
