“It was our customers who really liked our cake and kept telling us to enter the competition. » These customers should be even more numerous, now that the news is starting to spread. The Boulay bakery has just won several medals in the competition for the best galette des rois 2024.

Having lived in Beaumont-sur-Oise for 18 years, Frédéric Boulay had never before attempted the adventure of baking competition. “So we said to ourselves that we were going to introduce ourselves to several people,” breathes the discreet craftsman. Proud of his team, the baker applied with four of his apprentices and employees. A winning bet, proof that unity is strength, the Boulay bakery won two first places (for Frédéric Boulay in the artisan category and Mehdi Nibba in the apprentice ranking) and a third prize (for Raphaël Mendes in the apprentice category as well). Its two other candidates (Vincent Sedille and Frandy Ferdinand) placed in a more than honorable 4th and 5th place in the departmental competition.

The best pancake 2024 is made in Beaumont-sur-Oise.

When it comes time to stick the golden crowns, symbols of prizes won, on his window, Frédéric Boulay does not hide his pleasure. “I’m more of a baker than a pastry chef, working with puff pastry speaks to me,” he smiles. “The pancake is simple, that’s what I like. Just puff pastry and almond cream. » The secret of his recipe, apart from the passion, lies in the list of ingredients according to this specialist. “The important thing is to have quality raw materials. We are very careful about it. Our eggs, for example, come from hens who live outdoors at the Fourgonnerie farm in Oise. »

A vice-champion of France in L’Isle-Adam

To taste the result, however, the general public will have to wait until January 2. But reservations are already possible. To spare wallets which are suffering at the moment, the shop has managed to maintain the same prices as last year (€22.20 per frangipane pancake for 6 people for example). “We usually sell around 3,000 each year,” explains Frédéric Boulay. “But we are going to plan more. »

And if you want to put together a gastronomic tour of the galette des rois, you won’t have many kilometers to cover. The winning craftsman of 2023, Sylvain Le Maux, is located a few kilometers away, in L’Isle-Adam. He continued to shine on the podiums all year long. He has just won second place in the national competition. The galette from the house Aux 3 petits choux is vice-champion of France.

And still in the Oise Valley, definitely a privileged destination for puff pastry, the Moulin bakery in Nesles-la-Vallée won the first prizes in each category in the Val-Beurre croissant competition a few months ago. d’Oise (artisan, employer, apprentice). Another example of team success. It was also the first time in the history of the departmental competition that such a grand slam was won in the same year.
