The first time a Parisian sold a steak, Louis XVI was still king of France (not for much longer). It was in 1790 and Étienne Paris, winegrower and butcher from Buvilly (Jura), had just given birth to an extraordinary line of butchers. As expected, it was his son Antoine who succeeded him. This happiness of transmission, Claude Paris, the last, was not able to ensure it.

Of his four sons, none ultimately wanted to take over the business located in Dole (Jura). The establishment put up for sale, when Claude Paris, 62, wanted to retire, did not find a buyer despite its good location and good reputation.

In the end, and with death in their souls, the family had to resolve to put the company into liquidation, closing the two businesses and the laboratory, and dismissing the seven employees, some of whom had been with the company for more than 30 years. .

“It’s the end of a long story,” saddens Claude Paris, son of Michel, a butcher like him. I started here with my uncle. It was not a job where you had to count your hours. More than traders, we were artisans, manufacturers who only sold their products. It is a know-how that has been passed down over several generations. »

“For us this business was there forever”

Everyone in the store recognizes the hardness of the job but also the joy of satisfying the customer. “I really regret that no one wanted to take over the business. This is like the profession of butcher where vocations are rare. »

In the Dole butcher’s shop, some of the last customers have a very old connection with the trade. “We have been coming to Paris to buy meat for at least three generations,” assures Christine. We didn’t ask ourselves the question, for us this business was there forever. »

This time there will be no reopening, the Paris butcher’s shop is permanently closed after 233 years of activity.
