On the occasion of World Water Day 2021, the San Daniele Prosciutto Consortium pays homage to the Tagliamento river, one of the last European waterways to preserve the natural hydrological conditions and the original morphology, with intertwined channels, which changes according to the conditions and the volume of water transported.

Defined as the “king of Alpine rivers”, the Tagliamento flows for 170 kilometers, crossing Friuli-Venezia Giulia from the Mauria Pass to the Adriatic Sea and skirting the city of San Daniele. Going up the river, the brackish Adriatic breezes meet the cold ones coming from the Carnic Alps, generating unique environmental conditions. It is precisely these factors that affect the level of humidity and the natural regulation of temperature, giving uniqueness to the peculiar microclimate of the hills of San Daniele.

Together with the careful selection of the raw material and a millenary processing technique, the unrepeatable microclimate of the territory helps to create the inimitable taste of San Daniele DOP. The Production Regulations of San Daniele Ham and the regulatory device underlying the PDO, in fact, recognize the Tagliamento River an essential role in the curing of San Daniele Ham and in conferring the aromatic traits that characterize it. In light of the indispensable contribution made, the Consorzio del Prosciutto di San Daniele has always been in favor of the protection of the Friulian river.

On the occasion of World Water Day 2021, the Consortium has decided to keep alive the theme of protecting water sources and countering invasive interventions by man within the Tagliamento. It is thanks to the uncontaminated nature of the river that, on the proposal of the WWF European Alpine Program, the possibility of nominating the Tagliamento as a UNESCO World Heritage Site is being discussed, the highest recognition of protection of the cultural and natural heritage of the whole world.

The Consortium has implemented numerous activities in the field of waste control and water protection, including the waste water disposal service. Also through a careful use of techniques for water purification there is a continuous improvement of the wastewater. About 300,000 cubic meters are treated a year and, thanks to the technology used, it is possible to constantly monitor the quality of the water and the impact on the environment.
