If you don’t know what to cook to solve the last meal of the day, I’ll show you a light, low carb dinner that I usually make with zucchini and just three other ingredients.
Grilled courgette salad with feta
With a zuchinis large or two small, 50 grams of feta cheese Greek, a lemon and some sesame seeds in addition to the ingredients we want to season or some fresh herbs to flavour, we can prepare a grilled courgette salad with feta, ideal to enjoy at the end of the day.
We will start the dish by washing and removing the courgettes with their peel very well for later. cut into not very thin slices, Season with salt and pepper and place on a very hot grill or pan with olive oil.
Let’s skip a few minutes mixing the slices with a spatula or shaking the pan until we reach the desired point, then we remove them to a source and then add feta cheese cut into cubes small ones, lemon zest and a little juice, and season with extra virgin olive oil, toasted sesame seeds and, if you like, chopped fresh coriander or parsley.
We serve warm or let it cool if we want a fresher but no less preparation satiating and tasty, with quality proteins, rich in calcium and very low in carbohydrates.
This is the light, easy and quick dinner which was prepared with courgettes and only three other ingredients, and is excellent for getting out of trouble without neglecting your diet.
