Autumn is the season of apples, so the national food retail network “Elvi” together with chef and nutritionist Yevgenia Jansons offers a recipe for chicken fillet stuffed with apples and a charming apple cobbler.

Chicken fillet in bacon with apple and cheese filling

(for 2 persons, cooking time 40 min)

Ingredients

2 chicken fillets

4-6 thin slices of bacon

4-8 slices of cheese

1 sweet and sour apple, cored, thinly sliced

For the sauce

3-4 tbsp. olive oils

3-4 tbsp. lemon juice

1 tsp. syrup or honey

Thyme leaves

1 tsp. mustard

salt, black pepper

Preparation

  • Mix all the ingredients of the sauce to a homogeneous consistency.
  • Make a horizontal cut in the middle of each chicken fillet to form a “pocket”, spread the fillet a little (you can also not do this, but it makes the meat softer), smear the fillets with the sauce from all sides.
  • Put apple slices in the “pocket” and cheese slices on top of them.
  • Wrap each fillet in 2-3 slices of bacon (depending on the size of the fillets) and place in the heat-resistant container.
  • Bake in the oven (180 degrees) for 35-40 minutes, until the meat is ready (a clear liquid should come out of the meat when poked with a stick).

Apple cobbler

(for 8-10 servings, cooking time 1.5 hours)

This recipe requires a lot of apples, so it is the right choice if you have an overabundance of apples in the garden, and the recipe has reduced the amount of added sugar, so it is better to choose sweet or sour apples.

Ingredients

1.5 kg of apples (various varieties)

1/2 tsp. grated lemon peel

2 tbsp. lemon juice

2 tbsp. brown sugar

1 tbsp. white sugar

33 g of flour (tablespoon with a heap)

1 tsp. cinnamon

1/2 tsp. cardamom

1 tsp. vanilla sugar

a pinch of salt

For the dough

160 g of spelled wheat flour (you can also use high-quality whole wheat flour or a mixture of 50% high-quality wheat flour and 50% oat flour)

80 g shave

1/2 tsp. salt

1 tsp. baking powder

40 – 60 g buttermilk

1 ola

60 g of cold butter cut into small cubes

a pinch of ground cardamom

Preparation

  • Peel the apples, remove the cores and cut into thin slices.
  • Place the sliced ​​apples in a large bowl, cover with a mixture of sugar, flour, cinnamon, cardamom and a pinch of salt.
  • Add lemon juice and peels, mix everything thoroughly and transfer to a baking dish.
  • In another bowl, mix flour, sugar, salt, baking powder and cardamom.
  • Add the butter and quickly mix it with the flour mixture by hand to form crumbs.
  • Add egg and buttermilk – add 40 g from the beginning. buttermilk (if needed during kneading, add a little more) Mix the dough until it holds together – you don’t need to knead for long, the dough should have lumps
  • Place small pieces of dough on top of the apples and bake in the oven at 180 degrees for 45-55 minutes. Serve warm or chilled.
