“This month is the most important of the year,” explains Carole, manager of the Benoît Castel bakery (11th). Throughout January, the French celebrate Epiphany (January 6) by eating galettes des rois. The opportunity for bakeries to achieve the best turnover of the year. “The galettes des rois represent approximately 8% of our annual turnover,” reports Georges, manager of the Saint Georges bakery for 22 years (11th century).

60 million cakes sold each year

In France, around 60 million galettes des rois, if we take into account the entire sector, are sold each year, according to the estimate of the Federation of Bakery and Pastry Companies (FEB). “It depends on the formats, but we should easily go through more than 400 pancakes per day this weekend,” enthuses Florent, manager of the Maison Landemaine Roquette bakery (11th arrondissement). A celebration that is always profitable for these traders, but which does not escape the drop in purchasing power. “This year, I have planned 1,500 cakes. Whereas ten years ago, we produced more than 2,500,” notes Georges.
