What are the risks of eating raw chicken?

According to the Centers for Disease Control and Prevention (CDC), chicken can be a nutritious option, but raw chicken is often contaminated with Campylobacter bacteria and sometimes Salmonella and Clostridium perfringens bacteria.

If you eat chicken meat that is undercooked, you can get a foodborne illness, also called food poisoning. Also, you can get sick if you eat other food or drinks that are contaminated with raw chicken or its juices.

The CDC estimates that each year in the United States about one million people get sick from eating contaminated poultry.

Measures to prevent food poisoning from raw chicken

According to the CDC, if chicken is on your menu, when you’re shopping, cooking, or eating out, follow these tips to help prevent food poisoning:

  • Place chicken in a disposable bag before putting it in the shopping cart or in your refrigerator to prevent raw juices from coming into contact with other foods.
  • Wash your hands with warm, soapy water for 20 seconds before and after handling chicken meat.
  • Do not wash raw chicken. During washing, chicken juices can spread in the kitchen and contaminate other food, utensils, and countertops.
  • Use a different cutting board for raw chicken.
  • Never place cooked food or fresh vegetables or fruit on a plate, cutting board, or other surface that has previously held raw chicken.
  • Wash cutting boards, utensils, dishes, and counters with hot, soapy water after preparing chicken and before preparing the next item of food.
  • Use a food thermometer external icon to make sure the chicken cooks to a safe internal temperature of 165°F.
  • If you are cooking a microwave meal that includes frozen raw chicken, handle it as you would fresh raw chicken. Follow the cooking instructions to the letter to avoid food poisoning.
  • If you feel that the chicken you are served at a restaurant or anywhere else is not fully cooked, send it back to cook for a longer time.
  • Refrigerate or freeze leftover chicken within 2 hours (or within 1 hour if food is exposed to temperatures over 90°F, for example, inside a hot car or at a summer picnic) .
