Therefore, if you are a die-hard pizza addict, you should always have a jar of sauce in the freezer that can be thawed in the microwave, dough coasters wrapped in cling film ready to read, and cheeses of all kinds that will be fun to spread and delicious to eat half an hour later. You can make the sauce from tomatoes baked in the oven, garlic, olive oil and basil leaves ground together to a smooth texture in a stick blender, and store in a sealed jar for a week (and in the freezer – for as long as you want).

Sprinkle your favorite cheeses on top and send to the oven to bake for about fifteen minutes at a high temperature (190 degrees).

Mix flour, yeast, sugar, salt, oil and water in a bowl. Knead it well for a few minutes and let it rest for half an hour. Then, open it into a rectangle the length of the pan, spread the sauce, sprinkle generously with grated mozzarella (or yellow cheese, or Bulgarian) and some basil leaves to strengthen the Italian atmosphere. Roll the roulade and sprinkle yellow cheese on top, and put in the oven – bake for 40-45 minutes and cut into appetizing slices. To enrich the flavors, you can add any topping you would add to a pizza: from olives, corn and onion to asparagus, zucchini strips and sweet potato.

Start making the dough: mix dry yeast with flour, oil, warm water, salt and sugar. Mix the dough in a food mixer for 6 minutes until you get a uniform dough without lumps. Let it rise for 30 minutes, and during this time prepare the sauce (in case you don’t already have one ready in a jar): tomatoes, garlic, basil, olive oil and salt – that’s all you need. Grind in a stick blender and cook for 10 minutes. Now, when the dough is ready and the sauce is waiting, pour a little olive oil into the pan and brush it evenly. The pan should be greased, but not excessively. Roll out a thin circle the diameter of the pan, transfer it to the pan, spread a little tomato sauce and sprinkle yellow cheese generously, and any toppings you particularly like. Before turning on the fire, let the pizza rest for 10 minutes, then “bake” on medium heat with the lid closed. A few minutes, and you have a perfect pizza on the gas!
